Iris Expedition Dining: The Michelin-Starred Journey You Can’t Miss

In the midst of the spectacular fjord landscape, far from everything – yet at the heart of it – lies restaurant Iris. Iris Expedition Dining is a world-renowned culinary experience you must journey to find, and one you will never forget.

Your journey begins in Rosendal. From there, an expedition across the fjord awaits before you set foot in a futuristic underwater universe – but this is only the beginning of the adventure.

Behind the spectacular flavors stands a dedicated team led by Anika Madsen. They cultivate, harvest, and refine each ingredient with precision – crafting a menu that reflects nature’s cycle.

Here, nature is the main ingredient. From the fjord, the mountains, and the crisp sea air to the exclusive dishes – every detail is inspired by the raw beauty of the Hardanger region

This is not just a dinner – it is an experience, a journey through flavor, nature, and aesthetics, where every bite tells a story of Hardanger.

At restaurant Iris, guests are brought to the ingredients – not the other way around. In the heart of the Hardangerfjord, a Michelin-starred dining experience awaits, where nature itself sets the menu. Ready to explore the concept?

A journey to the unknown

The trip to Iris starts in Rosendal, where you are greeted and taken out on the fjord by boat. After a spectacular journey through the rugged and beautiful fjord landscape, with a pit stop and a welcome snack at chef Anika Madsen's boathouse on Snilstveitøy island, you disembark at one of the most unique restaurants in the world. The building, shaped like a giant salmon eye, floats in the middle of Hardangerfjord and is the world’s largest floating art installation. Here, between the sky, mountains, and sea, awaits a culinary experience you will never forget.
